As to the OS... Long list to follow...;)

 From DEC:

   RT-11
   RSTS-11
   RSX-11
   (rare) Ultrix-11

 Non-DEC
   Fuzzball
   TSX-11 (requires RT-11)

 FROM PUPS archives
   Unix from V5-->2.11 or later.

To name just a few that were available for that machine. Many have
Licenses for use but do check out PUPS as most of those are free.
