"KVM" switches work great, if you have keyboards and displays that
match PC convention, or can be tweaked that way.

Alternatively, you can make your own. Get some multi-gang wafer
switches and a bunch of connectors, and switch however many signals
you have to switch. Wafer switches aren't ideal for video signals,
but unless you have very high resolution displays, chances are you
won't notice significant degradation if you keep the video signal
wires short.
